Ingredients
  

Chia Pudding Base
  • 0.25 cup chia seeds
  • 1 cup oat milk or almond milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
Black Sesame Layer
  • 2 tbsp black sesame paste neri goma
Toppings
  • 0.5 cup Greek yogurt or coconut cream
  • 0.5 cup tapioca pearls boba
  • 0.25 cup brown sugar
  • 2 tbsp water

Equipment

  • Small saucepan
  • Whisk
  • Glass Jars or Cups
  • Mixing Bowl

Method
 

  1. Whisk chia seeds, milk, maple syrup, and vanilla in a bowl. Let sit 5 mins, whisk again, and refrigerate for 2 hours.
  2. Once set, separate 1/3 of the pudding and mix with black sesame paste to create the dark layer.
  3. Boil tapioca pearls according to package instructions. Drain.
  4. In the same pot, simmer brown sugar and water until syrupy. Add pearls and toss to coat.
  5. Assemble: Spoon black sesame layer into glasses first.
  6. Add the remaining plain chia pudding as the second layer.
  7. Top with a layer of yogurt/cream.
  8. Finish with warm brown sugar boba pearls and drizzle with extra syrup.

Notes

Consume boba immediately as it hardens when cold.
