Blueberry Cream Cheese Brioche

A soft, fluffy, enriched brioche bread studded with pockets of sweet cream cheese filling and bursting fresh blueberries. Perfect for brunch or dessert.

Ingredients
  

Brioche Dough
  • 3.5 cups bread flour plus more for dusting
  • 0.25 cup sugar
  • 2.25 tsp instant yeast 1 packet
  • 0.5 tsp salt
  • 0.5 cup whole milk warm (110°F)
  • 0.25 cup unsalted butter softened
  • 2 eggs large, room temp
  • 1 tsp vanilla extract
Filling & Topping
  • 8 oz cream cheese softened
  • 0.25 cup sugar for filling
  • 1 egg yolk for filling
  • 1.5 cups blueberries fresh or frozen
  • 1 egg beaten with 1 tbsp water for wash

Equipment

  • Stand Mixer (optional)
  • Round Cake Pan or Baking Sheet
  • Mixing bowls
  • Pastry brush

Method
 

  1. Mix warm milk, 1 tsp sugar, and yeast. Let bloom for 5 mins.
  2. Add remaining sugar, salt, eggs, vanilla, butter, and 3 cups flour. Mix to combine.
  3. Knead on low speed, adding flour gradually, for 8-10 mins until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1.5-2 hours until doubled.
  5. Mix cream cheese, sugar, and egg yolk until smooth.
  6. Punch down dough and shape into a round disk in a baking pan.
  7. Press indentations into dough and fill with cheese mixture. Top with blueberries.
  8. Cover and let rise again for 30-45 mins. Preheat oven to 350°F (175°C).
  9. Brush dough with egg wash. Bake 25-30 mins until golden brown.

Notes

Store leftovers in the fridge due to the cheese filling. Reheat briefly in the microwave for best texture.
