Ingredients
  

Shrimp Filling
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.25 tsp cayenne pepper optional
Salad & Assembly
  • 4 flour tortillas large burrito size
  • 1 head Romaine lettuce chopped
  • 0.5 cup Parmesan cheese shredded
  • 0.5 cup Caesar dressing
  • 0.5 cup croutons crushed

Equipment

  • Large skillet or cast iron pan
  • Mixing Bowl
  • Tongs
  • Knife

Method
 

  1. Pat shrimp dry. Toss with olive oil, paprika, garlic powder, cayenne, salt, and pepper.
  2. Sear shrimp in a hot skillet for 2-3 minutes per side until blackened and cooked through. Remove from pan.
  3. In a bowl, toss chopped lettuce, Parmesan, crushed croutons, and Caesar dressing.
  4. Warm tortillas slightly in the microwave or pan to make them pliable.
  5. Assemble wraps by placing salad mixture in the center and topping with cooked shrimp.
  6. Roll tightly, tucking in sides. Optional: Toast the sealed wrap in the skillet for 1-2 minutes per side.
  7. Cut in half and serve immediately with lemon wedges.

Notes

Crushing the croutons adds crunch without tearing the tortilla. Serve with extra dressing for dipping.
