- Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving overhang on two sides.
- Combine flour, sugar, and salt in food processor. Add cold butter and pulse until mixture resembles coarse crumbs.
- Add egg yolk and vanilla extract, pulsing until dough comes together. Press firmly into prepared pan.
- Bake crust for 18-20 minutes until lightly golden. Cool for 10 minutes.
- Grind pistachios in food processor until finely ground. Set aside.
- Cream softened butter and sugar until fluffy. Add eggs one at a time, beating well after each.
- Mix in vanilla and almond extract. Fold in ground pistachios, flour, and salt.
- Pour pistachio mixture over crust, spreading evenly. Bake for 25-30 minutes until set and lightly golden.
- Cook 1½ cups blackberries, sugar, and lemon juice in saucepan over medium heat for 8-10 minutes, mashing gently.
- Mix cornstarch with 1 tablespoon water, stir into blackberries. Cook 2 minutes until thickened. Cool slightly.
- Spread blackberry mixture over baked pistachio layer. Top with whole blackberries and chopped pistachios.
- Bake for final 10 minutes. Cool completely in pan for at least 2 hours before cutting into bars.
Notes
For cleanest cuts, refrigerate bars for at least 1 hour before slicing. Store in airtight container at room temperature for 2 days or refrigerate for up to 5 days. Bars freeze well for up to 3 months.
