- Preheat oven to 400°F (200°C). Fit the pie crust into a 9-inch deep-dish pie plate and chill in the refrigerator.
- In a bowl, whisk together flour, brown sugar, granulated sugar, cinnamon, and salt for the crumb topping.
- Cut the cold, cubed butter into the dry ingredients using a pastry blender or fingers until it forms pea-sized crumbs. Chill in the fridge.
- In a large bowl, gently toss the blackberries with granulated sugar, cornstarch, lemon juice, vanilla, and salt until evenly coated.
- Pour the berry filling into the chilled pie crust, scraping out all the juices.
- Sprinkle the chilled crumb topping evenly over the fruit filling.
- Place pie on a foil-lined baking sheet and bake at 400°F (200°C) for 20 minutes.
- Reduce temperature to 375°F (190°C) and bake another 35-45 minutes until topping is golden brown and filling is bubbling thick.
- Cool completely on a wire rack for at least 3-4 hours before slicing.
Notes
If the crumb topping begins to brown too quickly in the oven, tent the pie loosely with aluminum foil for the remainder of the baking time. Best served with vanilla ice cream.
