- Preheat your oven to 325°F (163°C). Pat the beef dry and season generously with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef on all sides until deeply browned, about 4-5 minutes per side. Remove beef and set aside.
- Lower heat to medium. Add onions and carrots, cooking until onions soften. Stir in garlic and tomato paste, cooking for 1 minute.
- Pour in the red wine to deglaze the pot, scraping up browned bits from the bottom. Let simmer for 3 minutes.
- Return beef to the pot. Add beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves.
- Cover with a lid and transfer to the oven. Cook for 2 hours.
- After 2 hours, add the potatoes to the pot. Cover and return to oven for another 1 to 1.5 hours, until beef is fork-tender.
- Remove fat from surface if necessary. Serve warm with the vegetables and sauce spooned over top.
Notes
To thicken the sauce further, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the simmering liquid after removing the meat.
