Method
- Mix mayonnaise, sweet chili sauce, and Sriracha in a bowl. Refrigerate.
- Set up 3 bowls: cornstarch with spices, beaten eggs, and panko breadcrumbs.
- Dredge shrimp in cornstarch, dip in egg, then coat in panko.
- Heat oil in a skillet to 350°F. Fry shrimp in batches for 2-3 minutes until golden.
- Drain shrimp on paper towels, then toss lightly with half the sauce.
- Divide rice into bowls. Top with spicy shrimp, cabbage, carrots, cucumber, and avocado.
- Drizzle with remaining sauce and garnish with green onions.
Notes
For a lighter version, air fry the breaded shrimp at 400°F for 8-10 minutes instead of deep frying. Serve with a lime wedge for extra zest.
