Method
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line with parchment paper.
- Whisk melted butter, brown sugar, and granulated sugar in a large bowl.
- Beat in eggs one at a time, then stir in vanilla extract.
- Fold in mashed overripe bananas until just combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add dry ingredients to wet, mixing until just combined (do not overmix).
- Fold in optional walnuts/pecans and/or mini chocolate chips. Spread batter evenly into prepared pan.
- Bake for 25-30 minutes, or until a toothpick comes out clean or with moist crumbs. Cool completely on a wire rack.
- For frosting: Beat softened cream cheese and butter until smooth. Gradually beat in sifted powdered sugar and vanilla. Add milk/cream as needed for desired consistency.
- Once brownies are completely cool, spread frosting over top. Garnish with optional banana slices or streusel. Slice and serve.
Notes
Use very overripe bananas for best flavor and moisture. Ensure brownies are completely cool before frosting to prevent melting. Store frosted brownies in the refrigerator.
