- Thaw the frozen spinach and squeeze it in a clean kitchen towel until it is very dry. This step is crucial to prevent soggy meatballs.
- In a large bowl, combine the ground chicken, dried spinach, crumbled feta, breadcrumbs, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix gently with your hands until just combined.
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Shape the mixture into about 20-24 golf-ball-sized meatballs and place on the baking sheet.
- Bake for 18-22 minutes, until golden brown and cooked through to an internal temperature of 165°F (74°C).
- While the meatballs bake, pour the marinara sauce into a large skillet and bring to a simmer over medium heat.
- Once baked, transfer the meatballs to the simmering sauce and let them cook together for 5-10 minutes.
- Serve hot, garnished with fresh chopped parsley.
Notes
Wet your hands with water before shaping the meatballs to prevent the mixture from sticking.
