Baked Salmon with Creamy Garlic Spinach

Ingredients
  

Salmon
  • 4 fillets salmon skinless, approx 6oz each
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
Creamy Spinach
  • 10 oz fresh spinach
  • 4 oz cream cheese softened
  • 0.25 cup heavy cream
  • 3 cloves garlic minced
  • 0.25 cup parmesan cheese grated
Toppings
  • 0.5 cup mozzarella cheese shredded
  • 1 tbsp fresh chives chopped

Method
 

  1. Preheat oven to 400°F (200°C). Grease a baking dish.
  2. Season salmon fillets with olive oil, paprika, garlic powder, salt, and pepper.
  3. In a skillet, sauté minced garlic in butter until fragrant. Add spinach and wilt completely.
  4. Stir in cream cheese, heavy cream, and parmesan until melted and creamy. Season to taste.
  5. Spread the creamy spinach mixture into the bottom of the baking dish.
  6. Place seasoned salmon fillets on top of the spinach.
  7. Sprinkle mozzarella cheese over the top.
  8. Bake for 12-15 minutes until salmon is flaky and cheese is melted.
  9. Garnish with chives and serve hot.

Notes

If using frozen spinach, thaw and squeeze out all excess liquid before cooking. Serve with lemon wedges for brightness.
