Ingredients
  

Donut Batter
  • 1.75 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.33 cup vegetable oil or melted butter
  • 0.5 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.75 cup pumpkin puree
  • 0.25 cup milk
Pumpkin Spice Glaze
  • 1.5 cups powdered sugar
  • 3 tbsp pumpkin puree
  • 1 tsp pumpkin spice
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and generously grease a standard donut pan with non-stick cooking spray or butter.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, whisk together oil (or melted butter), brown sugar, eggs, vanilla extract, pumpkin puree, and milk until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold together just until combined, avoiding overmixing.
  5. Transfer batter to a piping bag or zip-top bag with corner snipped, then pipe into prepared donut pan, filling each cavity two-thirds full.
  6. Bake for 12-15 minutes until donuts spring back when touched and toothpick comes out clean.
  7. Cool donuts in pan for 5 minutes, then invert onto wire rack to cool completely.
  8. For glaze, whisk together powdered sugar, pumpkin puree, pumpkin spice, vanilla, and enough milk to achieve thick but pourable consistency.
  9. Dip top of each cooled donut into glaze, allow excess to drip off, and return to wire rack.
  10. Let glaze set for 10-15 minutes before serving. Store in airtight container for up to 3 days.

Notes

Use pure pumpkin puree, not pumpkin pie filling. For best results, ensure all ingredients are at room temperature before mixing. Donuts are best enjoyed fresh but can be frozen unglazed for up to 3 months.
