- Preheat oven to 375°F (190°C). Grease a doughnut pan with non-stick spray or butter.
- In a large bowl, whisk together flour, sugar, baking powder, and ground pistachios.
- In a separate bowl, whisk melted butter, eggs, milk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and fold gently until just combined. Do not overmix.
- Transfer batter to a piping bag and fill doughnut cavities 2/3 full.
- Bake for 10-12 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
- Whisk powdered sugar, honey, and milk to create a thick glaze. Dip cooled doughnuts into glaze.
- Immediately sprinkle with chopped cranberries and pistachios before the glaze sets.
Notes
For a greener color in the batter or glaze, you can add a drop of food coloring or a teaspoon of matcha powder. Store in an airtight container for up to 2 days.
