- Preheat oven to 350°F (175°C). Grease a 6-cavity donut pan well with non-stick spray.
- In a large bowl, whisk together flour, sifted cocoa powder, brown sugar, granulated sugar, baking powder, baking soda, salt, and espresso powder.
- In a separate medium bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients. Fold gently with a spatula just until combined; do not overmix.
- Transfer batter to a piping bag and pipe evenly into donut cavities, filling about 2/3 full.
- Bake for 10-12 minutes until springy to the touch. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
- To make the glaze: Beat softened butter and powdered sugar until crumbly. Stir in milk and vanilla until smooth and thick.
- Dip cooled donuts into the glaze. Immediately sprinkle with coconut. Drizzle with melted chocolate and top with coffee beans. Let set before serving.
Notes
For a stronger coffee flavor in the glaze, substitute one tablespoon of milk with brewed espresso. Ensure donuts are completely cool before glazing to prevent melting.
