Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together ricotta, egg, parmesan, garlic, parsley, basil, onion powder, salt, and pepper.
- Add ground chicken and breadcrumbs. Mix gently with hands until just combined. Do not overmix.
- With wet hands, form mixture into golf-ball sized meatballs (about 1.5 inches) and place on prepared baking sheet.
- Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Meanwhile, heat marinara sauce in a large skillet. Add cooked meatballs to sauce and simmer for 5 minutes.
- Serve hot, optionally topped with extra cheese and fresh herbs.
Notes
For easier rolling, chill the meat mixture for 30 minutes before shaping. Leftovers keep well in the fridge for up to 4 days.
