  • 1 large fresh pineapple peeled, cored, cut into 1-inch cubes
  • 1 lb standard-cut bacon cut in half crosswise
Glaze
  • 0.75 cup dark brown sugar packed
  • 1 tbsp low-sodium soy sauce
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp cayenne pepper optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and top with a greased wire rack. Soak wooden skewers in water.
  2. In a small bowl, mix the dark brown sugar, soy sauce, black pepper, and cayenne pepper to form a paste.
  3. Wrap each fresh pineapple cube tightly with a half-slice of bacon.
  4. Thread 3 to 4 bacon-wrapped pineapple chunks onto each soaked wooden skewer, piercing through the bacon ends to secure them.
  5. Press the brown sugar glaze generously onto the outside of the bacon on each skewer.
  6. Place skewers on the wire rack and bake for 25-30 minutes until bacon is crispy and glaze is caramelized. Let cool slightly before serving.

Notes

Ensure you use standard-cut bacon, not thick-cut, so it crisps up before the pineapple overcooks. You can assemble these up to 24 hours in advance.
