- Preheat oven to 400°F (200°C). Line a baking sheet with foil and top with a greased wire rack. Soak wooden skewers in water.
- In a small bowl, mix the dark brown sugar, soy sauce, black pepper, and cayenne pepper to form a paste.
- Wrap each fresh pineapple cube tightly with a half-slice of bacon.
- Thread 3 to 4 bacon-wrapped pineapple chunks onto each soaked wooden skewer, piercing through the bacon ends to secure them.
- Press the brown sugar glaze generously onto the outside of the bacon on each skewer.
- Place skewers on the wire rack and bake for 25-30 minutes until bacon is crispy and glaze is caramelized. Let cool slightly before serving.
Notes
Ensure you use standard-cut bacon, not thick-cut, so it crisps up before the pineapple overcooks. You can assemble these up to 24 hours in advance.
