- Preheat oven to 375°F (190°C). Butterfly the pork loin and pound to 1/2 inch thickness.
- Sauté onions and apples in olive oil until soft. Stir in herbs and breadcrumbs to create stuffing.
- Spread stuffing over the pork, roll it up into a tight log.
- Wrap the pork log completely with bacon slices. Secure with kitchen twine if needed.
- Place pork in a roasting pan surrounded by cubed, seasoned sweet potatoes.
- Roast for 60-75 minutes until internal pork temperature reaches 145°F (63°C).
- Let meat rest for 15 minutes. Meanwhile, use pan drippings, cider, and stock to make a gravy.
- Slice, drizzle with sauce, and serve.
Notes
Ensure you let the meat rest before slicing, or the juices will run out and the meat will be dry. The sweet potatoes can be swapped for carrots or parsnips if desired.
