Bacon Mushroom Swiss Cheese Meatloaf

A savory, juicy meatloaf packed with sautéed mushrooms and Swiss cheese, topped with crispy bacon and even more melted cheese.

Ingredients
  

Meatloaf Base
  • 2 lbs ground beef 85/15 lean
  • 1 cup panko breadcrumbs
  • 0.5 cup whole milk
  • 2 eggs beaten
  • 0.5 cup Swiss cheese shredded (for inside)
Mushroom Mixture
  • 8 oz mushrooms chopped
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 tbsp butter
Topping
  • 6-8 slices bacon
  • 1 cup Swiss cheese shredded (for topping)

  • Large mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C). Soak breadcrumbs in milk in a small bowl for 5 minutes.
  2. Sauté mushrooms and onions in butter until softened and liquid evaporates (6-8 minutes). Add garlic and cook 1 minute.
  3. In a large bowl, mix ground beef, soaked breadcrumbs, cooled mushroom mixture, eggs, and 1/2 cup Swiss cheese. Do not overmix.
  4. Form mixture into a loaf in a baking pan. Top with bacon slices.
  5. Bake for 45-50 minutes until bacon is crispy and internal temp reaches 160°F.
  6. Top with remaining 1 cup Swiss cheese and bake/broil 3 more minutes until bubbly.
  7. Rest for 10-15 minutes before slicing to retain juices.

Notes

If the top browns too quickly before the center is cooked, tent loosely with foil. Serve with mashed potatoes.
