Method
- Cook bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Remove to paper towel-lined plate and set aside.
- In the same skillet, add butter and olive oil over medium-low heat. Add sliced onions and stir to coat.
- Sprinkle sugar over onions, season with salt and pepper, and cook slowly for 25-40 minutes, stirring occasionally, until deeply caramelized and golden brown.
- Combine shredded mozzarella and cheddar cheese in a bowl and set aside.
- Mix softened butter with mayonnaise if using. Spread mixture on one side of each bread slice.
- On unbuttered side of 4 bread slices, layer cheese mixture, crumbled bacon, caramelized onions, and more cheese. Top with remaining bread slices, buttered side out.
- Heat skillet over medium-low heat. Place sandwiches in skillet and cook 3-4 minutes per side until golden brown and cheese is melted.
- Remove from heat, let rest 1-2 minutes, cut in half diagonally, garnish with fresh parsley if desired, and serve immediately.
Notes
Caramelized onions can be made up to 3 days in advance. For extra flavor, add fig jam or hot honey. Store leftovers wrapped in foil in refrigerator for up to 2 days.
