Ingredients
  

Chicken & Marinade
  • 1.5 lbs chicken breasts boneless, skinless
  • 0.25 cup olive oil extra virgin
  • 3 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt plain, full-fat
  • 0.5 English cucumber
  • 2 cloves garlic grated
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 0.5 tsp salt
Assembly
  • 4 pita breads
  • 0.5 red onion sliced
  • 0.5 cup Kalamata olives pitted and sliced
  • 1 bunch fresh dill for garnish

Equipment

  • Grill or grill pan
  • Meat mallet
  • Box grater
  • Fine-mesh sieve
  • Mixing bowls

Method
 

  1. Pound chicken breasts to an even thickness and slice into strips.
  2. Whisk together marinade ingredients, add chicken, and marinate for at least 1 hour.
  3. Grate cucumber, sprinkle with salt, and let drain in a sieve for 15 minutes.
  4. Squeeze excess liquid from cucumber and mix with yogurt, garlic, lemon, dill, and salt to make tzatziki.
  5. Grill chicken strips over medium-high heat for 3-4 minutes per side. Let rest.
  6. Warm pita breads on the grill for 30-60 seconds per side.
  7. Assemble gyros with tzatziki, chicken, red onions, olives, and dill on warm pitas.
  8. Serve immediately with lemon wedges.

Notes

For best results, marinate the chicken overnight. The total time includes 1 hour of marinating time.
