Method
- Feed starter 4-6 hours before mixing so it is active and bubbly.
- Mix flours and water (reserve 20g water) in a bowl. Let rest for 1 hour (Autolyse).
- Add starter to the dough and mix well. Rest 20 minutes.
- Add salt, reserved water, and lemon zest. Mix until combined.
- Perform coil folds every 30 minutes for 2 hours.
- Stretch the dough out on a wet counter (Lamination), sprinkle with blueberries, and fold up.
- Allow to bulk ferment at room temperature until volume increases by 30-50%.
- Shape dough gently into a round boule and place in a dusted banneton. Refrigerate overnight (12-16 hours).
- Preheat Dutch oven to 500°F (260°C). Score cold dough and bake covered for 20 minutes.
- Remove lid, lower heat to 450°F (230°C), and bake 20-25 minutes until deeply golden.
Notes
Total time includes overnight fermentation. Active work time is approximately 60 minutes. Use rice flour for dusting the banneton to prevent sticking.
